I played with this basic idea for some time and, although I got
something that looked vaguely right in the System Data stats by
manipulating body types and orbital distances, I couldn't get any visual
representation in the system display.

I guess it depends on what you're trying to achieve.

Wouldnt you be able to put a body in a Trojan (L4/L5 point) by using
the orbital details of the planet and adjusting the time past Periapsis
to put the body 60 degrees ahead of or 60 degree behind the body (as far
as I can remember this is where such bodies would be found)?

As for bodies orbiting a common centre of mass could you not use the
Planet System body type for this?
